Korean BBQ Beef Burrito

Korean BBQ Beef Burritos make a new and different dinner idea. This dish can be served in tortillas or over rice.

Ingredients

  • 2 lbs. top sirloin, thinly sliced
  • 2 pears, peeled and cut into chunks
  • 4 cloves garlic, minced
  • 4 tsp. ground ginger, minced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 Tbsp. sesame oil
  • 1/4 cup mayonnaise
  • 1 Tbsp. sriracha
  • 2 cups cooked rice
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • Flour tortillas

Instructions

  1. Pulse pear, garlic and ginger in a food processor. Place beef, pear mixture, soy sauce, brown sugar and sesame oil in a slow cooker. Cover and cook on high for 3 to 5 hours or until tender.
  2. In a small bowl, mix mayonnaise and sriracha; set aside.
  3. Lay a tortilla flat on a piece of foil. Place desired amount of rice, meat, cilantro, green onion and sauce in the middle of the tortilla. Fold sides up, then roll it up front to back and wrap it with foil. Tear away foil as you eat the burrito.
