Almond-Crusted Halibut
Almond-Crusted Halibut is next on the menu. This meal is served with light greens and a vinaigrette dressing.
Ingredients
- 1 cup flour
- 1 1/2 tsp. salt, divided
- 1 1/4 tsp. freshly ground black pepper, divided
- 2 eggs
- 1 1/2 cups toasted almonds, finely chopped
- 2 tsp. lemon zest
- 1 1/2 lbs. skinless halibut fillet, cut into 4 pieces and patted dry
- 1/2 cup plus 2 Tbsp. olive oil, divided
- 8 cups mixed salad greens
- 1/4 cup fresh lemon juice
- 1 shallot, minced
Instructions
- Whisk flour, 1 teaspoon salt and 1 teaspoon pepper in a bowl. In a separate bowl lightly beat eggs. In a third bowl, mix almonds and lemon zest. Season fish with salt and pepper. Dredge each piece in flour, then egg, and then almond mixture, pressing almonds onto fish.
- Heat 2 tablespoons oil in a skillet over medium heat. Add fish and cook, flipping once, until browned on both sides and flaky throughout, about 4 minutes per side.
- Meanwhile, put greens in a large bowl. In a small bowl, whisk lemon juice, shallot, remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Gradually whisk in remaining 1/2 cup olive oil. Toss greens with desired amount of vinaigrette. Top greens with halibut fillets. Drizzle remaining vinaigrette over each and serve.
