Ingredients
- 2 (6 oz.) skinless salmon filets
- 2 Tbsp. vegetable oil
- 1/2 tsp. salt
- 1 cup fresh chopped cranberries
- 1/2 cup pomegranate seeds, optional
- 1/4 cup diced onion
- 1/3 cup freshly chopped cilantro
- 1 jalapeño, seeded and diced
- 2 Tbsp. lime juice
Instructions
- In a skillet heat vegetable oil over medium-high heat. Sprinkle salmon with salt. Cook for about 3 minutes on each side, until crispy and just cooked through in the center.
- Meanwhile, combine cranberries, pomegranate seeds, onion, cilantro, jalapeño and lime juice in a medium bowl. Season with salt and pepper. Spoon salsa over cooked salmon.
