Cranberry Salad with Balsamic Fig Dressing
Cranberry Salad with Balsamic Fig Dressing is an elegant, light and colorful meal for the whole family.
Ingredients
- 2 cups walnuts
- 1/3 cup maple syrup
- 1/4 tsp. cinnamon
- 1/8 tsp. ground cloves
- 1/2 tsp. salt
- 4 cups mixed greens
- 2 cups arugula
- Arils from one pomegranate
- 1 cup dried cranberries
- 8 oz. crumbled goat or feta cheese
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 1 Tbsp. fig preserves
Instructions
- Preheat oven to 375º.
- Place walnuts on a baking sheet lined with parchment paper. Toss walnuts with maple syrup, cinnamon, ground cloves and salt. Bake for 15 to 25 minutes, stirring throughout; cool.
- Add greens to a large salad bowl. Add pomegranate arils and cranberries. Add walnuts and cheese and gently toss.
- Whisk olive oil, balsamic vinegar and fig preserves until combined. Season with salt and pepper. Just before serving, drizzle dressing over salad and gently toss.
