Beef and Cheese Quesadillas

Beef and Cheese Quesadillas

Beef and Cheese Quesadillas are easy and delicious! Cut each tortilla into wedges for a perfect snack or appetizer.

Ingredients

  • 3 cups Monterey Jack cheese, divided
  • 1 (4.5 oz.) can green chilies, divided
  • 1/4 cup heavy cream
  • 1 1/2 Tbsp. cumin, divided
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 3 cloves garlic, minced
  • 1 lb. ground beef
  • 1 cup chopped onion
  • 1 Tbsp. chili powder
  • 2 Tbsp. olive oil
  • 8 flour tortillas
  • 1/2 cup freshly chopped cilantro
  • 1 tomato, chopped
  • 1/2 cup sour cream

Instructions

  1. In a small pot, add 1 cup cheese, half green chilies, heavy cream, 1 teaspoon cumin, salt, pepper and garlic. Heat until cheese is melted and well blended, about 10 minutes. Keep stirring to prevent bottom from burning. Keep on low until ready to serve.
  2. Meanwhile, in a large skillet, brown beef and onion for 5 minutes over medium-high heat until cooked through. Add remaining cumin, remaining green chilies, remaining cheese and chili powder.
  3. Heat oil in a separate large skillet over medium-low heat. Place tortilla on skillet and fill with 1/4 meat mixture. Place another tortilla on top. Cook for 1 to 2 minutes until golden brown, flip and cook on other side. Repeat steps for remaining quesadillas. Cut each quesadilla into 4 pieces and top with warm cheese sauce. Garnish with cilantro, tomato and sour cream.
