Philly Cheesesteak Stuffed Peppers

Ingredients
- 2 bell peppers
- 1 onion, sliced
- 1 (8 oz.) carton mushrooms, sliced
- 2 Tbsp. butter
- 4 cloves garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 tsp. Worcestershire sauce
- 1/2 lb. thinly sliced roast beef
- 8 slices provolone cheese
Instructions
- Preheat oven to 400º.
- Slice peppers in half lengthwise, remove ribs and seeds; set aside on a baking sheet. Sauté onion and mushrooms with butter and garlic over medium heat. Add salt, pepper and Worcestershire sauce. Sauté until caramelized, about 10 to 15 minutes. Add roast beef to mushroom mixture and cook for 5 to 10 minutes.
- Line the inside of each pepper with a slice of cheese. Fill with meat mixture and top each with another slice of cheese. Bake for 15 to 20 minutes until cheese is bubbly and golden brown.
- * If you like your peppers a little softer, bake them for a few minutes before filling
