Shrimp Pasta with Cauliflower Alfredo Sauce

Ingredients
- 2 cups cauliflower florets
- 1 lb. fettuccine noodles
- 1 cup milk
- 3 Tbsp. butter
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 1/2 cups grated Parmesan cheese
- 2 Tbsp. olive oil
- 1 lb. shrimp, peeled and deveined
Instructions
- Bring a pot of water to boil, add cauliflower and cook until soft. Remove cauliflower and set aside. Add
- noodles to boiling water and cook according to package directions, drain, reserving 1/3 cup pasta water and set aside.
- In a blender, combine cauliflower and milk until smooth. In a large skillet over medium-high heat, add butter and garlic. Add cauliflower puree and cook for 2 minutes. Season with salt and pepper. Turn off heat and stir in cheese. Add pasta and 1/3 cup reserved pasta water. Stir until combined.
- In a separate skillet over medium-high heat, add olive oil and shrimp. Sear shrimp on both sides until cooked through. Add shrimp to pasta and toss to coat.
