Breakfast Egg Cups

Make breakfast for Mother’s Day! Breakfast Egg Cups are an easy and healthy breakfast that the whole family can enjoy!

Ingredients

  • 1 Tbsp. olive oil
  • 1 cup chopped red pepper
  • 1 cup chopped green pepper
  • 1 cup chopped onion
  • 1 cup chopped spinach
  • 1 cup sliced mushrooms
  • 1 cup diced ham
  • 1/4 tsp. salt
  • 8 eggs
  • Hot sauce for serving

Instructions

  1. Preheat oven to 350°.
  2. Heat a large non-stick skillet over medium heat. Add oil, red pepper, green pepper and onion. Sauté for 5 to 7 minutes. Add in spinach, mushrooms and ham and cook for an additional 2 minutes. Season with salt and remove from heat.
  3. Crack eggs into a large bowl and whisk. Stir in cooked veggies. Pour mixture evenly into a greased muffin pan. Bake for 15 to 20 minutes. Cool and serve with hot sauce.
