Grilled Sausage and Veggies

Grilled Sausage and Veggies are made in tin foil on the grill or grill pan. Some bites are missing from the corner, Mike and Jess couldn’t wait to eat this one this morning!

Ingredients

  • 5 Tbsp. olive oil
  • 1 Tbsp. dried oregano
  • 1 Tbsp. dried parsley flakes
  • 1/2 tsp. garlic powder
  • 1 tsp. paprika
  • 1/4 tsp. seasoned salt
  • 1/4 tsp. pepper
  • 1 red bell pepper, sliced
  • 2 ears corn, cut into disks
  • 1 onion, sliced
  • 4 red potatoes, cut into bite-sized pieces
  • 1 zucchini, sliced
  • 1 (13 oz.) package smoked sausage or kielbasa

Instructions

  1. Preheat grill.
  2. In a small bowl, stir together olive oil, oregano, parsley, garlic powder, paprika, seasoned salt and pepper. Stir to combine. Toss seasonings, vegetables and meat in a large bowl.
  3. Place 2 pieces of tin foil on top of each other. Place some of the mixture in the center and then fold the foil around to seal. Repeat until all of the mixture is used. Grill covered over medium heat for 18 to 24 minutes, until vegetables are crisp tender.
