Balsamic Pork Loin Skillet
Balsamic Pork Loin Skillet is done in less than 30 minutes. Marinate the pork overnight for easy prep the next day.
Ingredients
- 1 lb. pork tenderloin, sliced 1/2-inch thick
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1/2 tsp. smoked paprika
- 1 Tbsp. honey
- 2 cloves garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. oregano
- 3/4 cup sliced red onion
- 2 oz. sliced Kalamata olives
- 1 zucchini, thinly sliced
- 1/4 tsp. red pepper flakes
- 1/2 cup Feta cheese
- Basil for garnish
Instructions
- Whisk together balsamic vinegar, olive oil, paprika, honey, garlic, salt, pepper and oregano. Add pork and mixture to a plastic resealable bag. Marinate for 30 minutes, up to overnight in refrigerator.
- Heat skillet on medium. Sauté onion until fragrant. Add pork and sauce. Cook on medium for 5 minutes. Add olives, zucchini and red pepper flakes. Flip pork over and continue cooking for another 5 to 10 minutes, until pork is no longer pink.
- Garnish pork and veggies with cheese and basil before serving.
