Chicken Parmesan Bites

Ingredients
- 1 loaf French bread, sliced
- 4 Tbsp. olive oil, divided
- 1/2 cup chopped fresh basil
- 1 lb. ground chicken
- 1/4 cup seasoned Panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp. Italian seasoning
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. garlic powder
- 1 cup marinara sauce
- 1/2 lb. sliced fresh Mozzarella cheese
- Fresh basil or arugula for serving
Instructions
- Preheat oven to 375º.
- Arrange bread slices on a baking sheet and drizzle with 3 tablespoons of olive oil to coat. Sprinkle basil over bread and bake for 8 to 10 minutes or until toasted.
- In a medium bowl, combine chicken, bread crumbs, Parmesan cheese, egg, Italian seasoning, salt, pepper and garlic powder. Roll mixture into tablespoon size balls, about 16 meatballs.
- Heat a large skillet over medium heat and add remaining tablespoon of olive oil. When hot, add meatballs and cook for 8 to 10 minutes, until golden brown.
- Remove bread from oven and top each piece with marinara. Add a meatball to each and then top with cheese. Return baking sheet to oven and bake for 5 to 10 minutes or until cheese is melted. Serve warm, topped with fresh basil.
