Thai Chicken Salad
Try Thai Chicken Salad for lunch or dinner this week. We are making a homemade dressing to go over top.
Ingredients
- 4 cups chopped cabbage
- 2 cups chopped red cabbage
- 2 carrots, grated
- 4 green onions, thinly sliced
- 1/4 cup minced cilantro
- 2 cups cooked, shredded chicken
- 2 Tbsp. lime juice
- 3 Tbsp. peanut butter
- 3 Tbsp. low-sodium soy sauce
- 3 tsp. honey
- 2 tsp. fish sauce or Worcestershire sauce
- 2 tsp. rice vinegar
- 1 tsp. sriracha
- 3 Tbsp. slivered almonds, toasted
Instructions
- In a large bowl, combine cabbage, red cabbage, carrot, green onion, cilantro and chicken. In a small bowl, combine lime juice, peanut butter, soy sauce, honey, fish sauce, rice vinegar and sriracha. Whisk until smooth. Toss cabbage mixture with dressing. Garnish with almonds.
