Buffalo Chicken Meatball Subs

Have this recipe waiting for you at home after work; buffalo chicken meatball subs are cooked in the slow cooker and super easy to make. Top these subs with ranch dressing!

Ingredients

  • 1 lb. ground chicken breast
  • 3/4 cups seasoned bread crumbs
  • 1 carrot, minced
  • 2 celery stalks, minced
  • 1 egg, lightly beaten
  • 1 cup plus 2 Tbsp. buffalo hot sauce, divided
  • 1/4 cup blue cheese crumbles
  • 2 Tbsp. nonfat plain Greek yogurt
  • 4 sub rolls
  • Ranch dressing for serving

Instructions

  1. Preheat oven to 450º.
  2. Coat baking dish with nonstick cooking spray. In a large bowl, combine ground chicken, bread crumbs, carrot, celery, egg and 2 tablespoons buffalo sauce. Roll mixture into 12 balls. Place meatballs in prepared dish and bake for 15 minutes, or until lightly browned and cooked through.
  3. Transfer meatballs to a slow cooker and pour remaining buffalo sauce on top. Cover and cook on low for 4 hours. In a small bowl combine blue cheese and yogurt. Spread blue cheese spread on inside of rolls. Add meatballs and top with ranch dressing.
