Margherita Pasta

Margherita Pasta is done in less than 30 minutes and all done in one pot! Try this delightful Italian dish for dinner tonight.

Ingredients

  • 1 lb. pasta
  • 2 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1/4 onion, finely chopped
  • 6 Roma tomatoes, chopped and divided
  • 4 cloves garlic, minced
  • 3 Tbsp. flour
  • 1 1/2 cups chicken broth
  • 1 1/2 cups milk
  • 2 tsp. chicken bouillon
  • 1 tsp. dried parsley
  • 1/2 tsp. dried oregano
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded Mozzarella cheese
  • 2 oz. cream cheese
  • 1/4 cup chopped fresh basil
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. red pepper flakes

Instructions

  1. Cook pasta according to package directions. Melt butter and olive oil in a large pot over medium-high heat. Add onion and half of tomatoes, sauté for 5 minutes. Add garlic and sprinkle in flour, stirring for 2 minutes.
  2. Turn heat to low, then slowly whisk in chicken broth and milk, stirring until smooth. Turn heat to medium-high and bring sauce to a simmer. Stir in chicken bouillon, parsley and oregano. Reduce heat to low and add cheeses, stir until melted and combined.
  3. Stir in remaining tomatoes, basil, pepper and red pepper flakes. Add pasta and stir to coat. Garnish with freshly grated cheese and basil if desired.
