Squash Corn Chowder

Ingredients
- 3 Tbsp. olive oil
- 1 cup chopped onion
- 1 cup diced celery
- 2 cloves garlic, minced
- 1/4 cup flour
- 1 1/2 tsp. dried marjoram
- 1/4 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 4 cups reduced-sodium chicken broth
- 1 cup milk
- 3 cups diced squash
- 2 cups diced red potatoes
- 1 cup corn
- 1 cup diced ham
- 1/4 cup chopped green onions
- 1/4 cup shredded pepper Jack cheese
Instructions
- Heat oil in a large pot over medium heat. Add onion and celery; cook for 3 to 6 minutes, until softened and beginning to brown. Sprinkle garlic, flour, marjoram, salt and pepper over vegetables and cook for 1 more minute.
- Add broth and milk; bring to a gentle boil, stirring constantly. Stir in squash, potatoes and corn. Simmer for 12 to 15 minutes, uncovered, stirring occasionally, until potatoes are tender. Add ham and cook for 2 minutes. Serve warm topped with green onions and cheese.
