Italian Sausage and Veggies

Italian Sausage and Veggies is an easy recipe done in 30 minutes! Add your favorite vegetables to this recipe and serve over rice.

Ingredients

  • 2 carrots, peeled and sliced
  • 4 red potatoes, chopped in 1-inch pieces
  • 1 zucchini, chopped
  • 2 red peppers, seeded and sliced
  • 1 1/2 cups chopped broccoli
  • 1 lb. Sparkle hot or mild sausage
  • 1/2 Tbsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 Tbsp. dried parsley
  • 1/2 Tbsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. dried thyme
  • 4 1/2 Tbsp. olive oil
  • 1/3 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°.
  2. Pour all veggies and sausage on a baking sheet lined with foil. In a small bowl combine basil, oregano, parsley, garlic powder, onion powder and thyme with the olive oil. Stir to combine. Pour seasoning mixture on top of the veggies and sausage and toss to coat.
  3. Bake for 15 minutes. Remove and toss. Bake for 15 minutes more or until veggies are crisp tender. Remove from oven and garnish with cheese.
