Chicken Burger Pitas

Ingredients

  • 1 1/2 lbs. ground chicken
  • 1/4 cup plain yogurt
  • 1 tsp. grated fresh ginger
  • 1/2 tsp. curry powder
  • 1/2 tsp. dried coriander
  • 1/4 tsp. cumin
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1 tomato, finely chopped
  • 2 jalapeño peppers, seeded and minced
  • 4 green onions, finely chopped
  • 3 large pita bread
  • Tzatziki sauce and shredded lettuce, for serving

Instructions

  1. Preheat oven to 400°.
  2. In a large mixing bowl, add chicken, yogurt, ginger, curry, coriander, cumin, cayenne and salt. Mix with your hands to combine. Add tomato, jalapeño and onions. Mix again.
  3. Form mixture into 6 patties.
  4. Place patties on a baking sheet sprayed with nonstick cooking spray and cook for 8 minutes. Flip the patties and cook for an additional 8 minutes.
  5. Serve in pita with Tzatziki sauce and lettuce.
