Cream Cheese Spinach Stuffed Chicken

Ingredients
- 4 chicken breasts
- 2 cups fresh spinach, chopped
- 1/2 (8 oz.) package cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded Mozzarella cheese
- 4 cloves garlic, minced
- 3/4 tsp. salt, divided
- 3/4 tsp. freshly ground black pepper, divided
- 1 tsp. chili powder
- 1 tsp. Italian seasoning
Instructions
- In a medium bowl, combine spinach, cream cheese, Parmesan cheese, Mozzarella cheese, garlic,
- /4 teaspoon salt and 1/4 teaspoon pepper.
- Slice chicken sideways careful not to slice all the way through. Season chicken with chili powder, Italian seasoning, 1/2 teaspoon salt and 1/2 teaspoon pepper. Spoon 1/4 cheese mixture into the middle of each chicken breast and fold. Use toothpicks to secure chicken if desired.
- Heat and grease grill or non-stick skillet on medium-high heat. Cook chicken, covered, for about 9 to 10 minutes per side or until the chicken is cooked through and cheese is melted.
