Skillet Lasagna
This week is packed with some simple, yet delicious recipes. For a filling dinner, make Skillet Lasagna.
Ingredients
- 8 uncooked lasagna noodles
- 1 (15 oz.) carton small curd cottage cheese
- 1/2 cup grated Parmesan cheese, divided
- 1 Tbsp. Italian seasoning
- 1 (24 oz.) jar tomato pasta sauce or your favorite homemade sauce
- 1 (10 oz.) package frozen spinach, thawed and squeezed dry
- 2 cups shredded Mozzarella cheese
Instructions
- Cook lasagna noodles according to package directions.
- In a large bowl, mix cottage cheese, 1/4 cup Parmesan cheese and Italian seasoning.
- Spread half of sauce in a large skillet sprayed with nonstick cooking spray. Top with 4 noodles. Spread half of the cottage cheese mixture over noodles. Top with half of spinach. Sprinkle 1 cup Mozzarella over spinach.
- Repeat layers with remaining ingredients. Sprinkle rest of Parmesan on top and cover.
- Place skillet on medium-low heat and cook for about 20 minutes, until cheese melts and sauce is bubbling. Remove from heat and let stand for 5 minutes before serving.
