Skillet Lasagna

This week is packed with some simple, yet delicious recipes. For a filling dinner, make Skillet Lasagna.

Ingredients

  • 8 uncooked lasagna noodles
  • 1 (15 oz.) carton small curd cottage cheese
  • 1/2 cup grated Parmesan cheese, divided
  • 1 Tbsp. Italian seasoning
  • 1 (24 oz.) jar tomato pasta sauce or your favorite homemade sauce
  • 1 (10 oz.) package frozen spinach, thawed and squeezed dry
  • 2 cups shredded Mozzarella cheese

Instructions

  1. Cook lasagna noodles according to package directions.
  2. In a large bowl, mix cottage cheese, 1/4 cup Parmesan cheese and Italian seasoning.
  3. Spread half of sauce in a large skillet sprayed with nonstick cooking spray. Top with 4 noodles. Spread half of the cottage cheese mixture over noodles. Top with half of spinach. Sprinkle 1 cup Mozzarella over spinach.
  4. Repeat layers with remaining ingredients. Sprinkle rest of Parmesan on top and cover.
  5. Place skillet on medium-low heat and cook for about 20 minutes, until cheese melts and sauce is bubbling. Remove from heat and let stand for 5 minutes before serving.
