Tuna Avocado Lunches

We have two takes on this Tuna Avocado Lunch. Serve this light refreshing dish in an avocado bowl or make a grilled cheese tuna avocado melt!

Ingredients

  • 1 avocado, halved and pitted
  • 1 (4.5 oz.) can tuna, drained
  • 1/4 cup diced red bell pepper
  • 1 Tbsp. finely chopped onion
  • 1 Tbsp. minced jalapeño
  • 1/4 cup chopped cilantro
  • 1 Tbsp. lime juice
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 slices bread
  • 2 Tbsp. butter
  • 1 slice white American cheese

Instructions

  1. Tuna Avocado Bowl
  2. Scoop out avocado to widen the “bowl” area. Add avocado, tuna, bell pepper, onion, jalapeño, cilantro and lime juice to a mixing bowl. Stir together until everything is well mixed. Add salt and pepper. Scoop tuna avocado mixture into avocado bowl and serve.
  3. Tuna Avocado Grilled Cheese
  4. Mix scooped avocado, tuna, bell pepper, onion, jalapeño, cilantro, lime juice, salt and pepper, set aside. Preheat grill pan over medium-high heat. Butter bread on one side of each slice. Place one slice, butter side down, into the heated pan. Add avocado tuna mixture and top with cheese. Grill until golden brown, flip and cook until cheese is melted.
