Balsamic Glazed Roast Beef

Ingredients
- 1 Tbsp. olive oil
- 1 (3 lb.) chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 1/2 tsp. red pepper flakes
- 1 cup low-sodium beef broth
- 1/2 cup balsamic vinegar
- 2 Tbsp. soy sauce
- 2 Tbsp. brown sugar
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. dry onion powder
- 1 lb. baby carrots
- 1 lb. potatoes, diced
- 2 Tbsp. cornstarch
- 2 Tbsp. water
Instructions
- Heat oil in a large pan over medium-high heat. Add roast and brown on all sides. Set aside.
- Add onion to pan and cook until tender. Add garlic and red pepper flakes. Cook for an additional minute.
- Place roast, onion mixture, broth, balsamic vinegar, soy sauce, brown sugar, Worcestershire sauce, onion powder, carrots and potatoes in a slow cooker. Cover and cook on low for 8 to 10 hours, or on high for 3 to 5 hours. Remove carrots, potatoes and beef. Slice or shred beef.
- Skim fat from cooking juices. Place juices in a sauce pan and bring to simmer. Mix cornstarch and water together. Add to pan and stir until thickened. Serve with beef and veggies.
