Balsamic Glazed Roast Beef

Sweater weather is here and this week we feature some fantastic Fall recipes. For a hearty dinner, make Balsamic Glazed Roast Beef.

Ingredients

  • 1 Tbsp. olive oil
  • 1 (3 lb.) chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1/2 tsp. red pepper flakes
  • 1 cup low-sodium beef broth
  • 1/2 cup balsamic vinegar
  • 2 Tbsp. soy sauce
  • 2 Tbsp. brown sugar
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. dry onion powder
  • 1 lb. baby carrots
  • 1 lb. potatoes, diced
  • 2 Tbsp. cornstarch
  • 2 Tbsp. water

Instructions

  1. Heat oil in a large pan over medium-high heat. Add roast and brown on all sides. Set aside.
  2. Add onion to pan and cook until tender. Add garlic and red pepper flakes. Cook for an additional minute.
  3. Place roast, onion mixture, broth, balsamic vinegar, soy sauce, brown sugar, Worcestershire sauce, onion powder, carrots and potatoes in a slow cooker. Cover and cook on low for 8 to 10 hours, or on high for 3 to 5 hours. Remove carrots, potatoes and beef. Slice or shred beef.
  4. Skim fat from cooking juices. Place juices in a sauce pan and bring to simmer. Mix cornstarch and water together. Add to pan and stir until thickened. Serve with beef and veggies.
