Strawberry Granola Parfait
For breakfast or an afternoon snack, make a Strawberry Granola Parfait, complete with vanilla yogurt and homemade granola.
Ingredients
- 3 cups old-fashioned oats
- 1/2 cup sliced almonds
- 1/2 cup coconut flakes
- 1/2 cup chopped pecans
- 1 tsp. salt
- 1/4 cup olive oil
- 1/3 cup maple syrup
- 1 1/2 tsp. vanilla
- 3 Tbsp. brown sugar, divided
- Fresh or frozen strawberries, chopped
- 1 tsp. sugar
- Vanilla Greek yogurt
Instructions
- Preheat oven to 350°.
- In a medium bowl, combine oats, almonds, coconut, pecans, salt, oil, syrup, vanilla and 2 tablespoons brown sugar. Spread on a baking sheet and bake for 20 minutes. Stir and bake for another 20 minutes. Remove from oven and toss with remaining 1 tablespoon brown sugar. Let cool.
- In a small bowl, lightly mash strawberries with sugar. Set aside. To serve, add yogurt to a small bowl, then top with granola mixture and strawberries.
