Spicy Shrimp Soup
For your next meal, spice things up and make Spicy Shrimp Soup. Full of flavor, this soup will definitely keep you warm during the wintry weather.
Ingredients
- 1/4 cup olive oil
- 4 shallots, chopped
- 1 carrot, chopped
- 1 hot chili, sliced or 1 tsp. red pepper flakes
- 4 cloves garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 (15.5 oz.) can diced tomatoes
- 8 cups low-sodium chicken broth
- 1 cup farro or barley
- 1 lb. medium raw shrimp, peeled and deveined
- 5 oz. torn escarole
- Fresh basil and bread, for serving
Instructions
- Heat oil in a large saucepan over medium-high heat. Add shallots, carrot, chili, garlic, salt and pepper. Stir and cook until vegetables are tender, about 6 to 8 minutes.
- Add tomatoes with juice and chicken broth. Bring to boil. Add farro and cook until tender, 20 to 25 minutes.
- Stir in shrimp and escarole. Cook until shrimp are opaque, about 2 to 4 minutes. Transfer the soup to bowls and sprinkle with basil. Serve with bread.
