Fresh Winter Salad
This week, make a Fresh Winter Salad for lunch! You’ll find all sorts of fresh fruits, nuts and cheese in this recipe.
Ingredients
- 2 Tbsp. balsamic vinegar
- 2 tsp. fresh lemon juice
- 1 Tbsp. Dijon mustard
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 tsp. onion powder
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 head radicchio or arugula, sliced into 3/4-inch pieces
- 2.5 oz. mixed baby greens
- 2 pears, cored, quartered and sliced into 1/2-inch pieces
- 3/4 cup chopped pecans
- 1/2 cup pomegranate arils
- 3 oz. crumbled gorgonzola cheese
Instructions
- In a small bowl, whisk together balsamic vinegar, lemon juice and mustard. Add oil and whisk until emulsified. Stir in garlic, onion powder, salt and pepper. Set aside.
- In a large salad bowl, mix radicchio and greens. Add pear, pecans and pomegranate. Slowly add the vinaigrette. Toss the salad until lightly coated. Top with gorgonzola and serve.
