Energy Bars

For a healthy snack, make Energy Bars – complete with dried fruit and seeds.

Ingredients

  • 1 1/2 cups prunes
  • 1/2 cup dates
  • 1 cup chopped almonds, divided
  • 2 Tbsp. sunflower seeds
  • 2 Tbsp. pumpkin seeds
  • 1/2 cup dried cranberries

Instructions

  1. Place plums, dates and 1/2 cup almonds in food processor. Pulse until the mixture becomes a sticky paste.
  2. Transfer paste to a medium bowl and add remaining 1/2 cup almonds, seeds and cranberries. Mix until combined. Spoon mixture into an 8 x 8-inch pan lined with parchment and press down firmly.
  3. Place in freezer for about 1 hour, then slice into 10 bars.
