Pork Bok Choy Stir Fry
For dinner, try something new and make Pork Bok Choy Stir Fry.
Ingredients
- 1 lb. boneless pork shoulder or pork loin, thinly sliced
- 1 1/2 tsp. cornstarch
- 1/2 tsp. red pepper flakes
- 1/4 tsp. salt
- 3 Tbsp. soy sauce, divided
- 2 Tbsp. rice vinegar
- 2 Tbsp. Chinese rice wine or dry sherry
- 1 Tbsp. vegetable oil
- 1/2 cup chopped green onions
- 1 (2-inch) piece ginger, peeled and chopped
- 2 large heads bok choy, cut into 2-inch pieces
- Chopped cashews, sesame seeds and white rice, for serving
Instructions
- In a medium bowl, toss pork, cornstarch, red pepper flakes, salt and 1 tablespoon soy sauce.
- In a small bowl, stir vinegar, wine and remaining 2 tablespoons soy sauce.
- Heat oil in a large skillet over high heat. Add pork mixture and cook first side for about 1 minute. Toss and continue to cook until done.
- Add wine mixture and bok choy to pan. Toss until sauce thickens and all ingredients are coated. Remove from heat.
- Top with cashews and sesame seeds and serve over rice, if desired.
