Pulled Pork Chili

This week for dinner, make Pulled Pork Chili. This unconventional chili is full of spicy flavor.

Ingredients

  • 1/2 Tbsp. vegetable oil
  • 1 1/2 lb. boneless pork shoulder, cut into pieces
  • 2 jalapeños, seeded and chopped
  • 3/4 cup chicken stock
  • 2 Tbsp. tomato paste
  • 1 Tbsp. brown sugar
  • 1 Tbsp. cocoa powder
  • 1/2 Tbsp. ground cumin
  • 1/4 tsp. cayenne pepper
  • 1/2 Tbsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 (15 oz.) can crushed tomatoes
  • 1 (15 oz.) can kidney beans, drained
  • 1 (12 oz.) bottle light beer
  • 3/4 Tbsp. cornstarch

Instructions

  1. In a large pot, heat oil over high heat. Add pork and brown each side for about 4 minutes. Transfer to a slow cooker.
  2. In a separate pot over high heat, add jalapeños and heat until fragrant. Add chicken stock and bring to boil. Reduce heat and simmer for 15 minutes. Transfer to blender and add tomato paste, brown sugar, cocoa powder, cumin, cayenne, Worcestershire and salt. Blend to a paste, then add to slow cooker. Add onion, garlic, tomatoes and beans to slow cooker.
  3. In a medium bowl, whisk together beer and cornstarch, then add to slow cooker. Cover and cook on low for about 6 hours, until pork falls apart.
