Pineapple Pulled Pork Sliders

Ingredients

  • 1/3 cup barbecue sauce
  • 1/3 cup pineapple juice
  • 3 Tbsp. low-sodium soy sauce
  • 3 Tbsp. honey
  • 1 tsp. sesame oil
  • 1/4 tsp. chili powder
  • 1/4 tsp. cinnamon
  • 3 cloves garlic, minced
  • 1 Tbsp. grated ginger
  • 1/2 Tbsp. hot sauce
  • 3 lbs. pork butt or shoulder
  • 2 cups pineapple chunks
  • Red cabbage, chopped green onion and slider buns for serving

Instructions

  1. Mix barbecue sauce, pineapple juice, soy sauce, honey, sesame oil, five spice powder, garlic, ginger and hot sauce in a bowl. Place pork into the slow cooker, top with half of the sauce and pineapple. Cook on low for 8 hours or high for about 4 hours.
  2. Remove pork, trim fat and shred with a fork. Mix in remaining sauce and juices from the slow cooker.
  3. Top buns with pulled pork, cabbage, green onions and pineapple chunks.
