Gia Russa Caprese Salmon

Gia Russa Caprese Salmon

For dinner, make Gia Russa Caprese Salmon. Topped with fresh tomatoes and balsamic glaze, this dish is filled with traditional caprese flavors.

Ingredients

  • 1/2 cup Gia Russa Balsamic Vinegar
  • 1/2 cup brown sugar
  • 1 tsp. Gia Russa Chopped Garlic
  • 4 (9-12 oz.) salmon filets, patted dry
  • 2 cups grape tomatoes, halved
  • 8 oz. fresh Mozzarella cheese, sliced
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 Tbsp. Gia Russa Balsamic Glaze
  • 1 box Gia Russa Gemelli
  • 1 jar Gia Russa Tomato Basil Sauce
  • 1/2 cup fresh basil, thinly sliced

Instructions

  1. Preheat oven to 375°.
  2. In a large bowl, whisk together balsamic vinegar, brown sugar and garlic. Add salmon and marinate in refrigerator 15 to 20 minutes. Remove salmon from marinade and place on a cutting board.
  3. Make a slit in each fish by slicing 3/4 of the way through. Place tomatoes and Mozzarella in each slit. Season with salt and pepper and transfer to a baking dish sprayed with non-stick cooking spray. Bake about 35 to 40 minutes. Remove and drizzle with Gia Russa Balsamic Glaze.
  4. Cook pasta according to box instructions. Transfer to a sauté pan, add tomato sauce and toss. Serve with salmon and garnish with basil.
