Gia Russa Caprese Salmon
For dinner, make Gia Russa Caprese Salmon. Topped with fresh tomatoes and balsamic glaze, this dish is filled with traditional caprese flavors.
Ingredients
- 1/2 cup Gia Russa Balsamic Vinegar
- 1/2 cup brown sugar
- 1 tsp. Gia Russa Chopped Garlic
- 4 (9-12 oz.) salmon filets, patted dry
- 2 cups grape tomatoes, halved
- 8 oz. fresh Mozzarella cheese, sliced
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 2 Tbsp. Gia Russa Balsamic Glaze
- 1 box Gia Russa Gemelli
- 1 jar Gia Russa Tomato Basil Sauce
- 1/2 cup fresh basil, thinly sliced
Instructions
- Preheat oven to 375°.
- In a large bowl, whisk together balsamic vinegar, brown sugar and garlic. Add salmon and marinate in refrigerator 15 to 20 minutes. Remove salmon from marinade and place on a cutting board.
- Make a slit in each fish by slicing 3/4 of the way through. Place tomatoes and Mozzarella in each slit. Season with salt and pepper and transfer to a baking dish sprayed with non-stick cooking spray. Bake about 35 to 40 minutes. Remove and drizzle with Gia Russa Balsamic Glaze.
- Cook pasta according to box instructions. Transfer to a sauté pan, add tomato sauce and toss. Serve with salmon and garnish with basil.
