Eggplant Roll-Ups
For a great weeknight dinner, put a spin on the classic eggplant Parmesan and instead make Eggplant Roll-Ups.
Ingredients
- 2 eggplants, sliced 1/4-inch thick
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 2 cups ricotta cheese
- 1 1/2 cups shredded Mozzarella cheese, divided
- 1/2 cup shredded Parmesan cheese
- 1/4 cup chopped fresh basil
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- 1 egg
- 1 cup marinara sauce, divided
Instructions
- Preheat oven to 350°.
- Place eggplant slices on a baking sheet lined with parchment paper. Season with salt and let sweat for 20 minutes. Dry with a paper towel and season with pepper. Bake for 20 minutes, until soft. Remove from oven and increase temperature to 400°.
- In a medium bowl, combine ricotta, 1 cup Mozzarella, Parmesan, basil, salt, garlic powder and egg. Spoon mixture onto each eggplant slice and roll. Spread half the marinara sauce along the bottom of an
- x 17-inch baking dish. Add roll-ups, seam down. Top with remaining half of sauce and 1/2 cup Mozzarella. Bake for 25 minutes, then serve.
