BBQ Quinoa Casserole
Our recipe for BBQ Quinoa Casserole is a great option for dinner– filled with chicken, cheese and flavorful BBQ sauce.
Ingredients
- 3 cups cooked quinoa
- 2 cups shredded Cheddar cheese, divided
- 2 cups shredded cooked chicken
- 1 (15 oz.) can black beans, rinsed and drained
- 1 cup corn
- 1/2 cup chopped green onion
- 1 cup BBQ sauce
- Cilantro, chopped red onion, sour cream and diced avocado, for garnish
Instructions
- Preheat oven to 375°.
- In a large bowl, combine quinoa, 1 1/2 cups cheese, chicken, beans, corn, green onion and BBQ sauce. Transfer mixture to a baking dish sprayed with non-stick cooking spray.
- Top with remaining 1/2 cup cheese and bake 15 to 20 minutes, until casserole is heated through. Remove from oven and top with onion, sour cream and avocado.
