Mini Taco Meatloaves
Celebrate Cinco de Mayo this week with Mini Taco Meatloaves. This recipe blends tacos with classic meatloaf to create a delicious dinner dish.
Ingredients
- 1 lb. ground beef
- 1 lb. ground pork
- 1 (2 oz.) package taco seasoning
- 1/2 cup chopped onion
- 1 (10.5 oz.) bag Doritos®, crushed
- 2 eggs, beaten
- 2 cups shredded Mexican cheese, divided
- 1 (24 oz.) jar salsa, divided
Instructions
- Preheat oven to 350°.
- In a large bowl, combine ground beef, ground pork, taco seasoning, onion, Doritos, eggs, 1 cup cheese and
- ounces salsa. Shape mixture into single-serve meatloaves and place on a baking sheet lined with foil.
- Top evenly with remaining 1 cup cheese and 8 ounces salsa. Bake until cooked through, about 30 minutes.
