BBQ Bourbon Pork Chops

Ingredients
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 Tbsp. chili powder
- 1/4 tsp. cayenne pepper
- 1 cup ketchup
- 3/4 cup bourbon
- 1/4 cup molasses
- 1/4 cup cider vinegar
- 2 Tbsp. brown sugar
- 2 Tbsp. Dijon mustard
- 1 tsp. Worcestershire sauce
- 1 1/2 tsp. salt, divided
- 1 1/2 tsp. freshly ground black pepper, divided
- 8 (1-inch-thick) bone-in pork chops
Instructions
- In a medium saucepan over medium heat, add oil, garlic, chili powder and cayenne pepper and cook for 1 minute. Add ketchup, bourbon, molasses, vinegar, brown sugar, mustard and Worcestershire. Let simmer until thickened, about 12 to 15 minutes. Stir in 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Heat grill to medium-high. Season pork chops evenly with remaining 1 teaspoon salt and pepper. Place on grill and cook about 5 minutes. Turn and cook for an additional 5 minutes. Baste with glaze and cook for 4 more minutes, or until internal temperature is 135°. Transfer to a platter and baste once more. Serve with remaining glaze.
