Grilled Corn Salad

Need a flavorful side dish for Memorial Day? Make Grilled Corn Salad, topped with lime juice and feta cheese.

Ingredients

  • 6-7 ears fresh corn, shucked
  • 1 cup diced red bell pepper
  • 3/4 cup chopped green onion
  • 1 jalapeño, seeded and chopped
  • 1/2 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 Tbsp. sour cream
  • 2 Tbsp. lime juice
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat grill to high heat.
  2. Grill corn about 2 minutes per side. Remove from grill and let cool. Cut corn off into a large bowl. Add bell pepper, green onion, jalapeño and cilantro to corn and stir to combine.
  3. In a small bowl, whisk together mayonnaise, sour cream, lime juice, paprika, salt and pepper. Add to corn mixture and toss to coat. Stir in cheese, then serve.
