Caramelized Onion Chicken
For an inexpensive dinner, make Caramelized Onion Chicken. This recipe is super simple and takes little time to make!
Ingredients
- 1 Tbsp. butter
- 2 onions, sliced
- 4 cloves garlic, minced
- 1/3 cup brown sugar
- 2 Tbsp. white wine vinegar
- 1 tsp. chopped fresh thyme
- 4 bone-in split chicken breasts
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
Instructions
- Preheat oven to 425°.
- In a large skillet, heat butter over medium-low heat. Add onions and garlic. Cook for about 10 minutes, until soft. Stir in sugar, vinegar and thyme and cook for an additional 6 to 7 minutes. Remove from heat.
- Season chicken with salt and pepper, then place, bone side down, in a baking dish sprayed with non-stick cooking spray. Spread onion mixture evenly over the chicken.
- Bake for 20 to 25 minutes, until done. Cover loosely with foil if onions are getting too dark.
