Pork with Blue Cheese Sauce

Pork with Blue Cheese Sauce

For dinner, treat your family to Pork with Blue Cheese Sauce. Serve with potatoes or a side salad to make it a meal!

Ingredients

  • 1 (2 lb.) pork tenderloin, cut into 8, 2-inch medallions
  • 3/4 tsp. salt, divided
  • 1/2 tsp. freshly ground black pepper, divided
  • 2 Tbsp. olive oil
  • 1 Tbsp. butter
  • 2 shallots, chopped
  • 1/4 cup white wine
  • 1/2 cup crumbled blue cheese
  • 3/4 cup heavy cream
  • 1 tsp. chopped fresh parsley

Instructions

  1. Season pork with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat oil in a large pan over high heat. Add pork and sear until brown, about 3 minutes per side. Transfer to a plate.
  2. Add butter to the pan and melt over medium heat. Add shallots and cook for about 30 seconds. Add white wine and use a wooden spoon to scrape the bottom of the pan. Stir in blue cheese and cream. Let simmer until thick, about 3 minutes.
  3. Return the pork to the pan and cook, flipping once, for about 4 minutes. Season with remaining salt and pepper, garnish with parsley and serve.
