Peach Pecan Muffins
For a delicious summer breakfast treat, make Peach Pecan Muffins. The brown sugar pecan topping in this recipe takes these muffins to the next level.
Ingredients
Crumble Topping
- 1/2 cup chopped pecans
- 1/3 cup brown sugar
- 1/4 cup flour
- 1 tsp. ground cinnamon
- 1/4 tsp. nutmeg
- 2 Tbsp. butter, melted
Peach Muffins
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 stick butter, melted
- 1/4 cup milk
- 1 tsp. vanilla
- 1 egg
- 2 peaches, peeled and diced
Instructions
Crumble Topping
- In a medium bowl, combine pecans, brown sugar, flour, cinnamon, nutmeg and melted butter. Set aside.
Peach Muffins
- Preheat oven to 400°.
- In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. In a separate bowl, whisk together butter, milk, vanilla and egg. Add wet mixture to dry ingredients and stir until moistened. Fold in peaches.
- Spoon mixture evenly into muffin tins lined with cupcake wrappers. Sprinkle each with crumble topping and bake 20 to 25 minutes.
