One Pan Beef Stroganoff Ravioli

For an easy weeknight dinner with minimal cleanup, make this recipe for One-Pan Beef Stroganoff Ravioli!

Ingredients

  • 2 Tbsp. butter
  • 1 onion, chopped
  • 2 (8 oz.) packages sliced mushrooms
  • 1 (1 lb.) package frozen beef ravioli
  • 1 cup beef stock
  • 1/4 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet over medium heat, add butter. Once melted, add onions. Cook until golden and soft, about 10 minutes. Stir in mushrooms and cook about 5 to 6 minutes.
  2. Add ravioli and beef stock and stir to combine. Cover and cook about 5 to 8 minutes, stirring halfway through, until ravioli are cooked. Stir in heavy cream, then remove from heat.
  3. Stir in sour cream, salt and pepper. Garnish with parsley and serve.
