One-Pan Beef Stroganoff Ravioli

Ingredients
- 2 Tbsp. butter
- 1 onion, chopped
- 2 (8 oz.) packages sliced mushrooms
- 1 (1 lb.) package frozen beef ravioli
- 1 cup beef stock
- 1/4 cup heavy cream
- 1/2 cup sour cream
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- Fresh parsley, for garnish
Instructions
- In a large skillet over medium heat, add butter. Once melted, add onions. Cook until golden and soft, about 10 minutes. Stir in mushrooms and cook about 5 to 6 minutes.
- Add ravioli and beef stock and stir to combine. Cover and cook about 5 to 8 minutes, stirring halfway through, until ravioli are cooked. Stir in heavy cream, then remove from heat.
- Stir in sour cream, salt and pepper. Garnish with parsley and serve.
