Ham Mac ‘n Cheese Muffins
For the kids’ lunches this week, prepare Ham Mac ‘n Cheese Muffins ahead of time. Serve hot or cold for a delicious meal!
Ingredients
- 2 cups prepared macaroni and cheese, cooled
- 2 eggs, beaten
- 1 cup diced ham
- 1/4 cup seasoned bread crumbs
- 2 Tbsp. Parmesan cheese
Instructions
- Preheat oven to 350°.
- In a large bowl, combine prepared macaroni and cheese, eggs, ham and bread crumbs.
- Scoop 1/2 cup of mixture into each cup of an 8-cup muffin tin, sprayed with nonstick cooking spray. Gently press down to flatten. Sprinkle with Parmesan cheese.
- Bake for 20 to 25 minutes. Immediately remove from tin and transfer to a cooling rack. Serve hot or cold.
