Ham Mac 'n Cheese Muffins

For the kids’ lunches this week, prepare Ham Mac ‘n Cheese Muffins ahead of time. Serve hot or cold for a delicious meal!

Ingredients

  • 2 cups prepared macaroni and cheese, cooled
  • 2 eggs, beaten
  • 1 cup diced ham
  • 1/4 cup seasoned bread crumbs
  • 2 Tbsp. Parmesan cheese

Instructions

  1. Preheat oven to 350°.
  2. In a large bowl, combine prepared macaroni and cheese, eggs, ham and bread crumbs.
  3. Scoop 1/2 cup of mixture into each cup of an 8-cup muffin tin, sprayed with nonstick cooking spray. Gently press down to flatten. Sprinkle with Parmesan cheese.
  4. Bake for 20 to 25 minutes. Immediately remove from tin and transfer to a cooling rack. Serve hot or cold.
