Green Bean Potato Casserole
This Thanksgiving, put a twist on a classic side dish and make Green Bean Potato Casserole. With a crunchy bread crumb topping, this dish is sure to impress guests!
Ingredients
- 1 onion, chopped
- 3 potatoes, peeled, cooked and mashed
- 10.5 oz. green beans, cooked
- 2 eggs
- 1/3 cup grated Parmesan cheese
- 1/2 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/4 cup bread crumbs
- 2 Tbsp. butter, cubed
Instructions
- Preheat oven to 350°.
- In a medium pan over medium heat, cook onion until soft. Transfer to a large bowl. Add mashed potatoes and green beans.
- In a small bowl, combine eggs, cheese, Italian seasoning, salt and pepper. Pour overtop bean mixture and toss to combine. Transfer to a baking dish sprayed with non-stick cooking spray.
- Top evenly with bread crumbs and butter. Bake about 20 to 25 minutes.
