Easter Breakfast Bagel Casserole

We went back into our recipe archives for this one and made a few changes. Perfect for Easter breakfast or brunch, the best thing about it is you can make it ahead of time. As you can see from the recipe, you can easily customize this recipe to your tastes!

What you will need is, 6 everything bagels, cut into 1-inch cubes, 1 lb kielbasa or cooked ham, diced, 2 cups shredded Cheddar or Swiss cheese, 1 (8 oz) package cream cheese, cut into 1-inch cubes, 8 eggs, 2 cups milk or half and half, 1/2 tsp salt, 1/4 tsp freshly ground pepper, 1/3 cup chopped chives.

Grease a 9 x 13-inch casserole dish. Add half of the bagel cubes. Sprinkle with half of the Kielbasa, half of the cheese and half of the cream cheese. Repeat with another layer of remaining ingredients. In a bowl combine eggs, milk, salt, and pepper. Whisk until combined. Pour egg mixture over bagels. Cover casserole dish and place in refrigerator for 4 hours or overnight. Preheat oven to 350º. Cover casserole with aluminum foil and bake for 40 minutes. Remove foil and bake for 15 minutes. Let cool before serving, garnish with chives.
