Back-to-School Breakfast Bagels

While breakfast is sometimes overlooked during busy school mornings, it doesn’t have to be with these make-ahead Back-to-School Breakfast Bagels. Prep these ahead of time, using Sparkle ingredients, freeze and reheat before the kids head out the door!

 

For this back to school breakfast you will need, 12 mini bagels, 8 Sparkle large eggs, 1/2 tsp salt, 1/2 tsp freshly ground black pepper, 6 slices American cheese, quartered, 12 slices deli ham or mini sausage patties.

Preheat your oven to 375º. Crack eggs into a large bowl and beat until smooth. Add salt and pepper and mix until incorporated. Pour egg mixture into a large muffin tin, sprayed with nonstick cooking spray, filling halfway. Bake 10-12 minutes, until egg is set. Place one cooked egg onto each bagel bottom. Top each with ham and 2 slices of cheese. Top with other bagel half. Eat immediately or wrap each sandwich tightly with plastic wrap and place in freezer. To reheat, remove plastic wrap from sandwich and wrap in a paper towel. Heat in microwave for 1-2 minutes, until heated through completely. Serve with a glass of Sparkle orange juice and enjoy!
