One-Pot Chicken and Tortellini Soup
The only thing better than a hearty bowl of soup on a cold day, is one that’s made in a single pot. Try making an easy recipe the whole family will love. Chicken, tortellini and broccoli come together perfectly to warm you up!
For this quick and easy recipe you will need, 3 tbsp olive oil, 1 tsp salt, divided, 1/2 tsp freshly ground black pepper, divided, 1 lb chicken breasts, cut into small pieces, 2 cloves garlic, minced, 3 tbsp flour, 3 cups chicken stock, 2 cups milk, 3/4 cup parmesan cheese, 3 cups fresh broccoli florets, 12 oz frozen tortellini.
Seas chicken pieces with 1/2 tsp salt and 1/4 tsp freshly ground pepper. Heat olive oil in a large pot and add chicken. Cook chicken pieces until browned and cooked all the way through, remove from pan. Add remaining olive oil to the pot and add garlic cloves, cook for 1 minute. Whisk flour and cook 1 minute. Whisk in broth and milk, making sure there are no clumps of flour. Bring the mixture to a simmer and add remaining salt and pepper, continuing to simmer until it begins to thicken. Add parmesan cheese, then add tortellini and broccoli florets and continue to simmer until tortellini is cooked, about 10 minutes. Add parmesan cheese and chicken and stir until combined and thickened. Season with additional salt, pepper and parmesan cheese if needed. Serve with crusty bread.
