Shrimp and Broccoli Stir Fry

Happy New Year! Start the year with fresh, healthy dishes. Shrimp and Broccoli Stir Fry is full of flavor and easy to make. Serve shrimp and broccoli over white rice.

Ingredients

  • 2/3 cup chicken stock
  • 1 Tbsp. cornstarch
  • 1 Tbsp. sugar
  • 2 Tbsp. soy sauce
  • 1/4 cup lemon juice
  • 1 tsp. lemon zest
  • 4 Tbsp. olive oil, divided
  • 1 lb. raw shrimp, peeled and deveined
  • 1/2 tsp. salt, divided
  • 1 lb. broccoli
  • 1 tsp. minced ginger
  • 2 cloves garlic, minced

Instructions

  1. In a small bowl, whisk together chicken stock, cornstarch, sugar, soy sauce, lemon juice and lemon zest; set aside.
  2. In a large frying pan, heat 2 tablespoons olive oil over medium-high heat. Add shrimp and sprinkle with 1/4 teaspoon salt. Cook for about 3 minutes, until opaque. Remove from frying pan and place shrimp on a plate.
  3. In same frying pan, heat remaining 2 tablespoons oil over medium-high heat. Add broccoli and cook until tender. Season with remaining salt. Add ginger and garlic and stir to combine. Pour lemon sauce mixture into frying pan with broccoli. Add shrimp and stir to combine. Simmer for about a minute or until sauce is thickened. Remove from heat and serve.
