Easy Greek Potato Salad

To begin this delicious dish you will need, 2 lbs redskin potatoes, 1/3 cup olive oil, 3 tbsp red wine vinegar, 3/4 tsp salt, 1/4 tsp freshly ground black pepper, 1 cucumber, diced, 1/2 sliced black olives, 1/2 cup shopped red or green peppers, 1/2 cup thinly sliced red onion, 5 or 6 pepperoncini peppers coarsely chopped, 1 cup crumbled Feta cheese.
Cook potatoes till tender, cool and cut into cubes. in a small bowl or measuring cup, combine vinegar, oil, salt and pepper; whisk well and set aside. In a large bowl, combine potatoes, cucumber, black olives, red onion, pepperoncini and Feta cheese. Pour dressing overtop and stir to combine. Refrigerate until cooled and ready to serve.

Easy Greek Potato Salad
