Thanksgiving Leftover Sausage Stuffing Balls
Not sure what to do with your Thanksgiving leftovers or wanting a new take on traditional favorites? These sausage stuffing balls are easy, delicious, and combines all your Thanksgiving favorites into one tasty bite!
What you will need is 1 pound of Sparkle sausage, 1/2 of a cup of finely minced onions, 2 stalks of finely minced celery, 1/2 of a cup of shredded Cheddar cheese, 1/3 of a cup of chopped dried cranberries, 1 box of stuffing mix (unprepared) or 2 and a 1/2 cups of leftover prepared stuffing, 2 beaten eggs, 1 cup of chicken broth, 1 and a 1/2 cups of leftover cranberry sauce, 1/4 of a cup of orange juice, and a pinch of Kosher salt.
To start, preheat your oven to 375º. Brown your sausage in large skillet over medium heat. Add onions and celery to skillet and continue to cook until vegetables are soft and onions are translucent, then transfer to a large bowl. Add in your stuffing mix, cranberries, and cheese and stir everything together. Mix in the eggs and chicken broth, then start forming your mixture into meatball-sized balls. Place each stuffing ball onto a baking sheet lined with foil or parchment paper and bake for 15 to 20 minutes, or until brown, then serve with toothpicks.
For the sauce, combine cranberry sauce, orange juice and salt in small saucepan over medium heat. Stir until thinned out a bit and completely combined and serve with sausage balls as a dipping sauce.
