Slow Cooker Sausage and Peppers
Thanks to Rosemary for her suggestion to make sausage and peppers. Sparkle sausage is made fresh in the store and has been a favorite of customers for many years. With minimal work because of the slow cooker, this recipe is easy for a weeknight dinner or great to for a large crowd, like a graduation party.
To make this delicious recipe, you’ll need two tablespoons of olive oil, two pounds of hot or mild Sparkle sausage that is cut into pieces if desired, two sliced bell peppers (we used red and green for extra color), one large sliced onion, three cloves of minced garlic, two tablespoons of tomato paste, one 14.5 ounce can of diced tomatoes with juice, half of a cup of red wine, half of a teaspoon of salt, one teaspoon of Italian seasoning, one teaspoon of onion powder, half of a teaspoon of crushed red pepper flakes (optional), and Hoagie buns and mozzarella cheese for serving.
In a large skillet, heat oil over medium heat. Add sausage links and cook for about 2 minutes per side, just until browned. Then transfer to your slow cooker.
Next, combine bell peppers, onions, garlic, tomato paste, diced tomatoes, red wine, salt, pepper, Italian seasoning, onion powder and red pepper flakes, then place overtop of your sausage.
Cook on low for 4 to 6 hours or on high for 2 to 4 hours. Serve sausage and peppers on hoagie buns topped with mozzarella cheese.
