Summer Corn Salad

Summer means it’s corn season! It’s much more available in July and we’re always looking for new ways to use it. This easy corn salad is a great side to almost any grilled meat dish and topped with corn chips… even better!

For this recipe, you will need 2 (15 ounce) cans of whole kernel corn, the corn can be drained or 4 cups from corn taken off the cob, 1 diced red pepper, 1/3 cup of finely diced red onion, 1 ½ cups of shredded Cheddar cheese, 2/3 cup of mayonnaise, 1/3 cup of sour cream, 1 tablespoon of taco seasoning, 1 tablespoon of dry ranch dressing, 1 tablespoon of lime juice, ¼ teaspoon of freshly ground black pepper, 1 (9.75 ounce) bag of chili cheese flavored corn chips and some chopped cilantro for topping.

In a large mixing bowl, start by stirring together your corn, red pepper, red onion and shredded cheese. In a small bowl, combine the mayo, sour cream, taco seasoning, ranch seasoning, lime juice and black pepper, and then pour this mixture over the salad. Right before serving, stir in the crushed corn chips. Finally, garnish with fresh cilantro if desired.

  • 2 (15 oz.) cans whole kernel corn drained or 4 cups corn off the cob

  • 1 1/2 cup shredded Cheddar cheese
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tbsp. taco seasoning
  • 1 tbsp. dry ranch dressing
  • 1 tbsp. lime juice
  • 1/4 tsp. freshly ground black pepper
  • 1 (9.75 oz.) bag chili cheese flavored corn chips
  • chopped cilantro for topping

Instructions

  • In a large mixing bowl, stir together corn, red pepper, red onion and shredded cheese.
  • In a small bowl, combine mayo, sour cream, taco seasoning, ranch seasoning, lime juice and black pepper and pour over salad.
  • Right before serving, stir in crushed corn chips and garnish with fresh cilantro if desired.
