Skinny French Toast Muffins

Skinny French Toast Muffins make an easy breakfast meal for the whole family.

Ingredients

  • 8 slices whole wheat bread
  • 2 cups egg substitute, original
  • 2 cups almond milk
  • 1 Tbsp. brown sugar
  • 3 tsp. cinnamon
  • 2 Tbsp. vanilla extract
  • Syrup for serving

Instructions

  1. Preheat oven to 375º.
  2. Break slices of bread into small pieces and place them in a large bowl. In a separate small bowl, mix together eggs, almond milk, brown sugar, cinnamon and vanilla extract. Add mixture to bread and stir to coat.
  3. Place mixture in a sprayed muffin tin. Bake for 25 to 30 minutes or until bread is crispy and a toothpick inserted comes out clean. Serve with syrup.
